Healthy On-the-Go Breakfast Bars Recipe

These delicious breakfast bars can be eaten any time of the day as a healthy snack or a quick breakfast on the go. Mom and dad will love them too!

Makes 16 to 20 bars


1 1/2 cups of Happy Baby Probiotic Oatmeal or Multi-Grain Cereal  (or replace with oatmeal)
1/2 cup organic oat bran
1/8 cup organic sesame seeds
1/8 cup organic flax seeds
1/4 cup organic pumpkin or sunflower seeds
1/2 cup of your favorite organic nut – like almonds or walnuts (or use more seeds for a nut-free variation)
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
2 ounces of Happy Baby Pear (or use 1/4 cup puréed pear or apple)
1/2 cup of organic honey or 100% pure organic maple syrup
2 large organic eggs
1/4 cup organic safflower oil
1/4 cup unsweetened organic shredded coconut
1 cup organic raisins or unsweetened dried organic cranberries

Preheat oven to 350º F. Line an 8 inch x 8 inch dish with wax or parchment paper. Make sure the paper sticks out just beyond the sides of pan on two sides.

In a food processor, combine Happy Baby Probiotic Oatmeal or Happy Baby Probiotic Multigrain cereal (or simply oatmeal), oat bran, seeds, nuts (or more seeds), and cinnamon until ground. Add in all other ingredients except raisins or cranberries and mix until well blended. Stir in raisin or cranberries. This should make a thick paste.

Spread into prepared dish and press down with spatula until evenly distributed. Bake for 20 minutes or until just done. Use ends of wax or parchment paper to remove giant bar to cutting block and cut into small bars while still warm. Store in an airtight container for up to a week in the fridge or freeze for a quick smack on the go.

Note: This recipe may be doubled and cooked in a 9 inch x 13 inch pan; add 5 minutes to the cooking time.

Variation: Make cookies. Instead of putting in a dish, drop paste by spoonfuls and cook at 350º F for 10 minutes. They will think you are the best parent ever to let them have cookies for breakfast!
